Grammed: Vege Nuggets with Tzatziki Garlic Yoghurt





Vege nuggets


2 large kumara / sweet potatoes, roughly chopped skin on
1/2 onion diced
1 TBSP butter
1 egg
1 carrot grated skin on
1 courgette grated, water squeezed out
1 cup baby spinach leaves, washed 
1 cup cheddar cheese, grated 
Big pinch of salt and a few turns of black pepper 

Egg wash + breading:
1 cup panko crumbs
1 egg
1 TBSP milk 

~1/4 cup canola oil 

1. Boil kumara/sweet potatoes for 10 mins till soft. Drain and mix through spinach leaves and allow to cool for 15 minutes or so until warm.
2. Heat butter in a pan, cook onions until soft, allow to cool for 10 minutes or so till warm. 
3. In a large bowl mix together cooled kumara, onions, 1 egg, grated carrot, grated courgette and grated cheese, salt and pepper.
4. To make the egg wash: in a small bowl whisk egg and milk till combined. Put panko crumbs in a separate small bowl. 
5. Form vege mixture into Tablespoon sized nuggets. Dip into the egg wash then coat with panko crumbs. 
6. Shallow fry in a small sauce pan in canola until golden turning once. Place on paper kitchen towels to drain off excess oil. 
7. Serve with salad for a light meal. 

Note:  Nuggets can also be baked  at 200oC fan bake for 20 minutes. 


Tzatziki Garlic yoghurt dipping sauce


1/2 cup Greek yoghurt
1/4 cup mayonnaise
1 garlic clove crushed
1/2 cucumber, deseeded, finely diced
1 TBSP lemon juice
1/4-1/2 tsp salt

Mix all together in a small bowl.

Grammed: Lazy Shanghai Red Braised Pork Belly






Made this for our Mid Autumn feast last night. This is my slow cooker, low fuss, busy mom version of the traditional red cooked pork belly dish. Decadent, moreish, melt in your mouth tender pork belly. Always a hit, perfect for feeding a crowd. Just serve with rice and simple stir fried veges.

Grammed: Cacao Cashew Bliss Balls - vegan, gluten free, no refined sugars



These are perfect you feel like a sweet treat with you cuppa but still trying to be healthy.

Cacao Cashew Bliss Balls - vegan, gluten free, no refined sugars

makes 18 balls.

1/2 cup cashews
3/4 cup pitted dates
1 Tablespoon cacao powder
1-2 teaspoons water, as required
2 Tablespoons desiccated coconut

In a blender whizz together the cashews, dates, cacao powder then add water a little at a time to form a paste. Press firmly tablespoonfuls into balls and roll in coconut (I found the coconut stayed on better if you pressed it in)

Chocolate Peanut Butter Chia Pudding



We only moved from Wellington just over a year ago but my gosh it seems like a lifetime ago.  We were pre-baby, living right next to town with a magnificent view overlooking the beautiful harbour.   We used to just stroll on down to the centre of town and go to one of the many amazing eateries right at our door step. Life is most definitely very different now with a little 10 month old to chase around!!

One of our 'locals' was this funky American-style diner at the bottom of our road that did the most ah-mazing Reese's peanut butter chocolate milkshakes.

I've been feeling rather nostalgic recently and missing our Wellingtonian mates and local haunts so I thought I might recreate a little piece of our windy city life by making Chocolate Peanut Chia Puddings as a healthified homage to our Welly life.

This is a super quick super yum meal we have pretty regularly on our weeknight dinner rotation.  We usually have it as a vego meal but you can add some pan fried chicken or a softly boiled egg for extra protein

Christmas Gingerbread Bundt Cake



It has been 9 months since my last post but it might as well have been a lifetime ago! Since my last post we have welcomed our gorgeous little girl into the world and the months have just flown by. Life is so full and hectic and magical with a little one. It has been the most incredible experience watching her grow and become a little person. And now all of a sudden Christmas is here!

Christmas is a million times more fun with a kid isn't it? For our first Christmas as a family of three we decided to go with a living Christmas tree! The idea is that we will get to watch the tree and our little girl grow up together.  New traditions for our brand spanking new family.
