Baking for Hospice: Black Forest Rocky Road

 Last weekend was Round 12 for Baking for Hospice and the theme was All About Dads.

As you know, my Dad's fav cake was black forest gateau, but since I've only just made Black Forest Cupcakes a couple of posts ago and I was too lazy to make a full out black forest cake I went with a variation of my fav Cadbury chocolate bar: Black Forest Rocky Road.




This is a super super easy recipe.  If you can even call it a recipe.  It's really a list of ingredients to throw together.  But it's one of those things that the end result is much much more delicious than the sum of it's parts.

The combo of the chewy raspberry jellies, pillowy marshmallows, salty sweet oreo cookies and the dark chocolate is unbelievably good.  Very very moreish.


I love dark chocolate so naturally made this rocky road with good old Whittakers 62%.  The slight bitterness of the dark chocolate balances out the sweet jellies and marshmallows. Of course you can use milk chocolate if you prefer milk or go the other way and use a higher percentage cocoa chocolate.


These would also make really good gifts.  The rosy pink raspberry lollies make a pretty stained glass effect against the dark chocolate.  Easy, delicious and pretty - what more could you want in a recipe?!

Black Forest Rocky Road

Makes around 25 pieces

500g dark chocolate, broken into small pieces
1 cup of raspberry jelly lollies
1 1/2 cups marshmallows (if they are really big, cut into smaller pieces)
1 x 150g packet of oreos, cut into quarters

1. Line a 23cm x 23cm baking dish with foil.  Spray lightly with non stick baking spray (like canola oil).

2. Place chocolate into a microwave safe bowl and microwave on high for 30 second bursts until melted (stirring after each go in the microwave).

3. Mix all the rest of the ingredients into the chocolate and mix well.

4. Tip into the prepared baking dish and smooth with a spatula.

5. Mine took around 2 hours to set at (it's a bit cooler at the mo in Auckland). You can speed the process up in the fridge.  If you are using milk chocolate, it may take a little longer.

6. Cut into squares and serve with a nice strong cup of coffee or tea. Yum.

  1. Yummy! I love homemade rocky road - I usually use turkish delight (traditional, I guess) and almonds, and love love love it with Lindt chocolate, but I am drooling looking at your pics - might have to try raspberry jellies next time!

    teresa: I love pistachios in rocky road too! Do you make it withthe raw pistachios or the salted ones? I usually buy the raw pistachios but they're so expensive! The oreos are a must - the biscuity bits totally make the rocky road! :)
