Baked Vanilla Mochi Cake aka Crack Cake *updated recipe*





This Vanilla Mochi Cake is called "Crack Cake" in our household. Crispy flaky edges. Gooey chewy center. Heavenly vanilla. It is seriously addictive. And super easy to make. A very dangerous combination.

Lychee and Summer Berry Jellies - vegan, gluten-free, plant-based


This is the ultimate summer dessert. Cool and refreshing. Beautiful to look at and it's  healthy too!


This is one of those ridiculously easy but super impressive looking desserts. What a winner!

It’s so pretty to look at - ruby red raspberries and sapphire blueberries encased in crystal, like little jewels on the plate... it’s almost too pretty to eat. Almost.

Chocolate Peanut Butter Chia Pudding



We only moved from Wellington just over a year ago but my gosh it seems like a lifetime ago.  We were pre-baby, living right next to town with a magnificent view overlooking the beautiful harbour.   We used to just stroll on down to the centre of town and go to one of the many amazing eateries right at our door step. Life is most definitely very different now with a little 10 month old to chase around!!

One of our 'locals' was this funky American-style diner at the bottom of our road that did the most ah-mazing Reese's peanut butter chocolate milkshakes.

I've been feeling rather nostalgic recently and missing our Wellingtonian mates and local haunts so I thought I might recreate a little piece of our windy city life by making Chocolate Peanut Chia Puddings as a healthified homage to our Welly life.

Last minute Christmas noms: Christmas truffles





This year's Christmas has been a last minute kinda Christmas.

Got all the prezzies last minute (just finished today whew). Flying up last minute (Christmas eve, evening). Packing for being away for 2 months, you guessed it last minute (aka have not started, yikes).

Party Time: Hundreds and Thousands Sprinkles Layer Cake




Nothing says it's party time like 100s and 1000s.  And I've had two awesome reasons to celebrate lately.

1) I passed my finals exams for medicine. Wooohoooo! One more year as an intern left before becoming a real doctor. Beyond exciting.

2) A week ago, I turned the big three-oh. I gotta say, the dirty thirties are awesome!

We had a 3 day non-stop eating bonanza.  I am not even kidding - we did high tea lunch, byo dinner, ice cream and pancakes brunch, all you can eat meat Brazilian churrasco lunch, Chinese banquet dinner, and rounded off with a buffet diy sushi brunch. Food, food, and more food. It was glorious.

All weekend I was surrounded by food, friends, family. New friends, old friends. Breaking bread with the people who had known me the longest and knew me the best. I had never felt more loved or more blessed. The whole time I had just one thought running through my head: this is what happiness is.

You know, I’d always thought that once you had reached 30, you’d be all grown up and do proper adult things. As it turns out some things have most definitely changed:
  • most of my friends now have a kiddo or two;
  • an awesome Friday night is home with the hubby watching Sherlock; and
  • I’ve started using eye cream.
But some things stay exactly the same:
  • we all still crack up at dirty jokes;
  • we still love giving each other stick; and
  • I’m still at uni (sigh).
Not to mention even at the ripe old age of 30 we all still think 100s and 1000s equals happiness and parties. So to mark my 30th, to celebrate passing exams and because I am clearly 30 going on 3, I made a Hundreds and Thousands Layer Cake.

One can never be too old for sprinkles.

Black forest chia chocolate pudding and a favour



First, I'd like to ask you a favour.

10 years ago today, my dad turned 48.
For his birthday, he cooked us dinner.  Even though he was really sick.
That's the kinda person he was, always putting others before himself. Always putting us first.

That was the last birthday we got to celebrate with him.  He passed away five months later.


The older I get, the more I appreciate the things he did for us and the person he was.  There isn't a day that goes by that I'm not thinking about him, missing him, and wanting to be more like him.

So today I'm celebrating his memory with you all: those of you who knew him, those of you who loved him, those of you who he never even met - because he was too good a person not to share.

And my favour is this: Let's all do something nice for someone today. Even if it is only a little thing, the world would be a little bit of a better place today, because of you, because of my dad.

Happy birthday Dad.


Every year on Dad's birthday, I try to make something black forest because that was his favourite type of cake. So this year, since I'm on a bit of a health buzz, I made Black Forest Chia Chocolate Pudding. Even though I know Dad would've scrunched his nose at all the hippy stuff.

Mini Toffee Apple Pies


Ummmmm did someone hit the fast forward button on this year?
How is it that Easter is next week and we are almost a quarter of the way through 2014 already!??

This year was always going to be a doozy.  It's my 5th year of medical school and it is the year with The Exams.

Yip the Finals.

I liken this year to one of those hydro-slides at the swimming pools. You know, the ones that look like a colourful tube of fun times?  Sure, it looks like fun from a distance until it sucks you in,  going waaaaaay faster than you'd anticipated, making you loose your orientation and tumble turn all the way to the other end where it spits you, bruised and gasping for breath.

Welcome to 5th year med school.  Do not pass go do not collect $200.


Ok ok it's not all bad.  It is actually fun for the most part and interesting and I'm learning heaps.  My first run this year was Orthopaedics with its insane amount of cool gadgets and power tools, mind blowing surgeries and awesome banterous surgeons.  In surgery, the boss would often ask for his scalpel, then pliers, then the power drill.  Power drill.  In a surgery.  Crazy talk.  Seriously some of the coolest surgeries I've seen.



So to say thank you for being an incredible bunch of people, teaching me heaps, and letting me do cool stuff, I baked these Mini Toffee Apple Pies for Team Ortho out at Hutt Hospital.

Since at the moment almost every waking minute is either spent at the hospital or studying, my brain is too fried to handle too complicated recipes. So this recipe is stupid easy.  And also stupid good.

Guilt-free chocolate mousse with boysenberry jelly




Fact: This chocolate mousse has no cream in it. 



I know right? Mind blowing.

There had been a lot of water cooler chatter about chocolate mousse recipes at work in the last little bit.  Debs had been trialling out chocolate mousse recipes for dinner parties and the lovely Shanti had recently made the Hervé This Chocolate and Water Mousse.  I had chocolate mousse on my brain.

I wasn't brave enough to tackle the chocolate and water mousse (maybe next time) but it did set me on the track to find a not-so-sinful-but-still-decadent chocolate mousse recipe.

Enter the celebrated Raymond Blanc OBE and his Chocolate Mousse Maman Blanc.

Christmas noms: White Christmas Rocky Road


This is the rocky road to end all rocky roads.

Truth is, actually, I'm in love with this rocky road.

To me this rocky road is perfect.

All those amazing colours make it look like a like a stained glass window.  It's almost too pretty to eat.  Almost, coz once you have one piece you forget all bout how pretty it looks and just want to scoff the lot.


What usually happens at Christmas is that I make a batch and it gets eaten as quickly as I make it and people are begging for the recipe.

It's so good you might want to sing a song about it stark naked on TV on Christmas Eve.

Maple Sweet Potato Pie / Maple Kumara Pie


"I feel like a pie" has a completely different meaning in New Zealand than it does in the States.

When a Kiwi talks about pies, we're most likely thinking about savoury meat pies: the kind with delicious mince and gravy wrapped in flakey short pastry.  All buttery and greasey and just what you feel like on a Sunday morning after the Med Ball a late night out.

But from what I understand, in the USA, "pies" are generally sweet, like pecan pies, pumpkin pie, peanut butter pie.  Drool.  I've only recently been introduced to this magical world of American sweet pies thanks to Sweet Mothers KitchenErmahgerd how good is that place??!?  Totally obsessed.

So to further fuel my obsession and because it was becoming embarrassing how often I go to walk past the place and find myself walking out with a slice of pie, I decided to create a Kiwi-ized version of the southern Sweet Potato Pie - a Maple Kumara Pie.

Just as a side note, in New Zealand we tend to call sweet pies "tarts".  But I guess "I feel like a tart" has a double meaning also...

Chocolate Dairy Food a.k.a. Chocolate Pudding

There are some foods from childhood that are best appreciated only as a kid: Hubba Bubba Bubble Gum, Fruit for Yonks and Roll Ups a.k.a. plastic fruit leather, lolly pops that make your mouth go blue, fake cheese slices. 

And then there are childhood favs that I'm pretty sure I will still love when I'm 80: fairy bread, marmite and chip sandwiches, and Chocolate Dairy Food.


Now those not in New Zealand, what we know as "chocolate dairy food", you know as "chocolate pudding", a creamy cold treat made of milk, cocoa and cornflour.  They were the quintessential lunch time snack for the average kiwi kid, sold in little plastic pottles in packs of six, so you can hang them conveniently on the edge of the supermarket trolley when Mum and Dad did the grocery shopping (I still do that...).  Nowadays, it's marketed as a kiddie snack that's a source of calcium but every now and I buy a pack as a treat for myself...of course since calcium is good for adults too and all.

The Quintessential Quince: Maple Chardonnay Slow Roasted Quinces

The quince is a quirky little fruit.  

If you haven't experienced quinces before, they are a bit like a cross between a very hard pear and a quava in texture, practically inedible in its raw state but when you cook it for long periods, its white flesh slowly develops a gorgeous ruby red hue that tastes of fragrantly floral tartness. 

I know I'm romanticising them a little but heck I'm not the only one, according to myths, legend and wiki the quince was the fruit given to Aphrodite, the Goddess of Love by Paris the Prince of Troy and ancient Greek brides would nibble on quinces to perfume their breath before entering the bridal chamber.

This quintessential autumnal fruit is rather old-fashioned and these days isn't all that common to come by.  They are rarely seen in supermarkets plus the quince season is quite short. You kinda gotta know people who know people.

Peanut butter truffles

My dancing instructors used to always drum into us to practise, practise, practise.  Everyone starts off completely rookie but to remember your routine / get down in the splits / perform well in front of an audience / pretty much get good at anything: you have to do it over and over and over again.

Which is all good and dandy when you're talking about whirling around in a sparkly costume but a completely different story when you're learning to put in a cannula.

Today was my very first go at putting in an i.v. line and...well, I wasn't a natural.  I managed to jab myself with a (clean) needle.  Then managed to stab straight through the house surgeon's vein and give him a massive bruise at the back of his hand.  Oh dear.

Surely I can only get better at it right?!?

I know at least that baking definitely gets easier with practice, as does making truffles.  Have made a few different types of truffles over the years: good old ganache truffles, eggnog truffles, raspberry truffles, oreo truffles and most recently these Peanut Butter Truffles.  And it's gone from a stressful messy process to a kinda fun messy process.  One can only hope this medicine thing is similar....

I've been a terrible blogger.  It's been almost a whole month since my last post and that is far far too long!  I apologize unreservedly and to sweeten the deal thought I might share this gorgeously decadent, utterly romantic, perfect for Valentine's Day, dessert with you my lovely readers.   Will you forgive me and be my blogger valentines? Caramelized Banana & Bourbon Loaf and the Quest to be Quiz Master

I have two significant quizzes in my life at the mo.  So been feeling rather quizzical lately.
 
The first quiz is a bit of a quiz rivalry.  

I have a intense friendly contest with my friend Johnny.  Now, just because we do it for fun, it does not mean we don't take it very seriously.  We take it very seriously indeed.

There is a running tally.  There are double points days.  There is a title up for grabs: Quiz Master.

Although Johnny tends to, and has for the year or so we've had this context going, consistently kicked my behind, I am happy to announce that I was today's Quiz Master.  Yeeeeeeuuuss 

I really needed it too.  Having lost my quiz mojo this week, bottoming out on a measly 5/15.  The shame of it.  In my frustration, I even stooped to accusing my friend of Armstrong-ing his results.  Sorry Johnny 

Hopefully, he can be as forgiving as this Caramelized Banana & Bourbon Loaf.

Happy Birthday 2013 and My First Pavlova

Happy New Year everyone and a big Happy Birthday to 2013!
(Seriously, did anyone else keep finding themselves accidentally texting "Happy Birthday" instead of "Happy New Year"?? So easy to do no???)

We've just come back from the epic eat-a-thon that was Christmas and a rowdy sunshine and gumboot filled New Years.  Aaaaaaand straight back to work.

But during our break, I did get time to do some musing whilst lazing around in the sun: how would one sum up the year that was 2012?  The year the world didn't quite end.  A year of big changes: moving city, getting to live with husband again, having two new Hospices to our Baking for Hospice run and adding a new nephew to the clan.  And year of big sadness too, for far too many awesome people I know and also for people a world away.  A year of saying bye to good friends, saying hi again to old friends and making brand new ones.  A tornadoey Hobbity kinda year.

And, as it turned out, it was a year of Pavlovas.  Of this particular Pavlova Stack with Lemon Curd, Strawberries, and Mint to be precise.

B for Baby Brandy Baskets with Vegan Lemon Cream and Passionfruit Curd


This post is brought to you by the letter B.

B is for Busy Busy Busy.  After weeks of being a bit of a bum and not doing much, I went straight into an action packed event extravaganza of the last three weeks.  Got myself a summer job as a civil servant (when in Wellington...), went back up to Auckland twice, saw a pre-screening of the Hobbit in all its 48 frame 3D glory (ah-mazing - everyone should go!), made my very first pavlova (post to come!), finished up our last Baking for Hospice round for the year, and that's not even counting all the prep for Christmas!!  So B is for need a Breather and Being very sorry for the lateness of this post!






B is also for Back to School. I was lucky enough to get to go back to my old high school's leavers dinner.  2012 marks ten years since my last year at Rangitoto College...but it sure doesn't feel like it's been that long!  Was really awesome getting to catch up with old teachers as an 'adult' to discover that they are all actually hilariously fun people.  Go Rangi!

And finally, B is for these Baby Brandy Baskets with Vegan Lemon Cream and Passionfruit Curd.


I LOVE brandy snaps.  They are just the right mix of gingery, crispy caramelly, and creamy.  All cigar-shaped and cream-filled, they were the height of sophistication in the 80's, so totally retro cool now.

Olympic Obsession and Sweet Cherry Pie



Only if you have been in the deepest valley, can you ever know how magnificent it is to be on the highest mountain ~ 2012 Mens Double Sculls Olympic Gold Medalist Eric Murray quoting Richard M. Nixon.

How good are the Olympics?!

I've stayed up late and got up early just to catch a glimpse of the rowing, swimming, athletics, you name it.  I've found myself playing the armchair 3rd umpire, tsk-tsking at the officials making rubbish calls on sports I'd never even watched before in my life.  Who knew weightlifting, synchronized diving, gymnastic trampolining and canoe slalom made such great television?

The tears, the controversy, the drama.  Gah. Cannot. Stop. Watching.

And in amongst the sporting juggernauts of China, USA and GB, little old New Zealand has had a golden run.  Three golds and four bronzes.  We are even beating the Aussies. It has been magical to watch these amazing athletes who have dedicated more than a decade of their lives, finally achieving their dreams.

Eric Murray, aged 30, half of the golden double sculls pair with Hamish Bond, spoke about all the set backs and knock downs they had had along the way.  He quoted Richard Nixon's "Deepest Valley" quote as giving him inspiration in races.  It is truly inspirational the sacrifice these athletes have made.  Years of dedication, of unwavering support from their families, of grueling hard work and disappointments, financial setbacks and pressure to deliver.

And it gives me courage.  At the ripe old age of 27 and only halfway into a medical degree, having walked away from a career in law, lived apart from my husband for almost two years, fended disbelief and disapproval and struggled with a gargantuan student loan, I've often questioned my sanity and whether I've made the right choice.  But these incredibly brave and talented athletes have shown me that sacrifice and belief in oneself does pay off and dreams really do come true.

You could say they are oar-inspiring.

This Sweet Cherry Pie, whilst gorgeous and delicious, really has nothing to do with the Olympics.  Unless you count the golden pastry crust or that it's a winner of a recipe.

If at first you don't succeed: Guilt-free Oreo Chocolate Mousse Tart

Recently my in-laws decided to go vegan.

Whereas I am very happily non-vegan.

I unabashedly love all things creamy and cheesy and can't help but be skeptical of vegan recipes that say they are just as good as the full cream versions.  Cream, cream cheese and butter, makes all things luscious and delicious.  I always find myself poo-pooing vegan recipes, I mean how could a soy/nut alternative be anywhere near as good?  And how reliable are the tastebuds of someone used to vegan fare when comparing to decadently delicious dairy equivalents?

But to accommodate my in-laws' new diet, I've ventured into the weird and wacky world of vegan dessert making.  Unfortunately, I didn't hit the ground running.  In fact, it was a big fat vegan FAIL.  I made a vegan lemon cheesecake that stubbornly wouldn't set and tasted like a lemony cashew nut milkshake.  Not quite the "tastes just like cream cheese" decadent dessert the recipe promised.

But instead of being put off, it made me more determined to try out more recipes to get that elusive vegan victory.

And sweet sweet victory came in the form of this Guilt-free Oreo Chocolate Mousse Tart - a chocolate cream pie with a secret ingredient.

Mmm Malted Milo Malteser Ice Cream



Ice cream is exquisite.  What a pity it isn't illegal ~ Voltaire.

I got brain freeze walking home tonight.

Yes, an ice cream headache just because it was so darn cold down here in Dunedin and not because I got to eat delicious ice cream.  Talk about jipped.

I gotta say though, despite the freezing temperatures outside, I could still totally do a big bowl of ice cream for dessert.  Just what is it about this classic frozen dessert that makes it so universally loved, so good, so addictive?  The endless flavors and toppings?  Maybe its dreamy smoothness?  Or the way it melts into creamy sweetness in your mouth?  Whatever it is, there's one thing that's for sure: ice cream equals happiness.

Getting that pseudo ice cream headache just made me long for this Malted Milo Malteaser Ice Cream I made a wee while back.  It's a glorious malt bonanza.  Chocolate malt powder, malted milk power AND chocolate coated malt balls.  Coz let's face it, everything tastes better as ice cream.
