Grammed: Chilli Pickled Cucumbers





Make this whenever cucumbers go on special. Such a refreshing side dish for summer meals.

CHILLI PICKED CUCUMBERS


1 cucumber cut into 3cm long batons
1 tsp salt
1 tsp sugar

Dressing
1 TBSP sugar
3-4 tsp rice vinegar
2-3 tsp soy sauce
2 cloves garlic finely chopped
2-3 tsp chilli oil

1. Mix cut up cucumber, sugar and salt and let sit in a strainer over a bowl for 30 mins (max 4 hours).
2. Mix dressing ingredients and adjust to your taste aiming for a balance of sweet/salty/sharp/hot. Set aside. Discard the cucumber liquid. Mix dressing through the cucumbers just before serving.
