Grammed: Vegan Peanut Butter Chocolate Mousse






This is another I-can’t-believe-it’s-healthy vegan paleo gluten-free dessert. It’s so darn rich and creamy if I hadn’t made it myself I wouldn’t have believed it’s made of TOFU instead of cream. I know, tofu?? You 100% cannot tell there’s tofu in it. All you taste is intense chocolatey peanutty amazingness. I served it with some frozen raspberries sprinkled on top which means I was basically eating a salad amiright?

VEGAN CHOCOLATE PEANUT BUTTER MOUSSE


serves 2

300g pressed silken tofu
100g smooth peanut butter
100g dark chocolate melted, I used Whittaker’s 72% cocoa dark Ghana chocolate
2 TBSP maple syrup
1 TBSP vanilla extract
In a food processor, blend everything except the chocolate till smooth. Scrap down the sides and then add the melted chocolate and blend till smooth.
You can serve it immediately or chill. Will firm up when chilled so take out of the fridge a little before serving. It would make great chocolate truffles! Serve with frozen raspberries or chia raspberry coulis
