Sky High Fluffy Pancakes aka Greatest of All Time Pancake recipe



Happy Shrove Tuesday aka Pancake Tuesday 🥞 !

This is the my GOAT pancake recipe.

Perfect incredibly fluffy and soft pancakes every time. Easy enough to whip up with a toddler insisting on “helping” out in the kitchen and an infant on one hip.  Pancake perfection.





The only possible vaguely downish side is that you have to wait 20 minute in total for the mixture to do its magic but that’s a just enough time to make a coffee then have to change a nappy or three in which time the mixture is ready and your coffee is lukewarm. Again. #momlife.

I have not used another pancake recipe since this one came into our lives last year it’s that good.

The secret, I think, is in the the wait time which gives the mixture a chance to foam and get light and airy; and also in the gentle handling of the batter as you scoop it so you don't all those hard won bubbles.





Sky High Fluffy Pancakes

Serves 3


3/4 cup milk
2 Tablespoons white vinegar
1 cup flour
1 tsp baking powder
1/2
teaspoons baking soda
1-2
Tablespoon sweetener granules (or 3-4 Tablespoon sugar)
2 eggs
2
Tablespoon butter, melted
2 teaspoons vanilla extract  



  1. Mix the milk and vinegar in a 2 cup measuring jug and set aside for 10 minutes.
  2. While you wait, in a mixing bowl, whisk together the flour, baking powder, baking soda and sweetener/sugar to remove lumps.
  3. Add eggs, vanilla, and melted butter to the milk/vinegar mixture and whisk to mix well.
  4. Fold wet eggy mixture into the dry flour mixture and mix gently until just combined. Leave to rise for a further 10 minutes. You will see the mixture foam up.
  5. Cook 1/3 cup at a time over medium heat, a non stick pan worked best for me. Make sure you only very gently dip the measuring cup into the batter when scooping to maintain the bubbles formed. Cook for 1.5-minutes minutes on each side until golden and puffy. Pancakes will actually keep nice and soft for at least the rest of the day (we've never had any left over to test any longer!)

Serving ideas: 
  • butter + maple syrup 
  • frozen raspberries 
  • bananas - fresh or caramelised 
  • bacon
  • berry chia jam + cream cheese
  • caramelised pineapple slices
